What Are Rhizomes?
Wasabi rhizome is the stem of the wasabi plant. Unlike fake “wasabi paste”, fresh wasabi has a more delicate flavor with a gentle sweetness and a heat that fades quickly.
How To Use:
To use it, rinse the rhizome under cool water, trim the portion you plan to use with a vegetable peeler, and grate on a wasabi grater in a circular motion. Let it sit for about a minute to develop flavor, then serve within 20 minutes with fish, steak, or noodles.
How to Store:
For optimal storage, wrap in a slightly damp paper towel inside an airtight container/bag in the fridge. Refresh the towel as needed to keep it from drying out. Use within 2-4 weeks.
